ALIGOTE WILD YEASTS
Unfiltered white dry wine made on wild yeasts. The total number of bottles of the 2019 harvest is 300 bottles. Alcohol: 13%. Harvest 2019. Grape variety "Aligote". Plot of 1 ha in Bolgrad district, Odessa region. Yield 2 tons per 1 hectare. Reduction of grape yield by 50%.
Cold maceration for 5 days. Wild yeasts, spontaneous fermentation. Aging on the must for 30 days. Alcoholic fermentation in an oak barrel (225 liters). Malolactic in an oak barrel. Use of wild yeast and bacteria in both fermentations.
Aging in an oak barrel for 9 months.
The total number of bottles of the 2019 harvest is 300 bottles of 0.75 liters each.
